TG can catalyzes the reactions of cross-linking intra-and inter-molecular of proteins, thus TG can improve emulsification, gelation ability, viscosity and high thermal-stability of food protein.

E-polylysine, Nisin, Natamycin are natural preservatives which can respectively inhibit different bacteria, molds, yeast, etc.
